Sour cream apple muffins
For Maui Karen and others who might have an abundance of apples (especially for those in Michigan, where the apples are now ripe):
This is from "On Your Way: A Collection of Recipes for A New You" ... I met this woman in my support group at MMPC in Grand Rapids. She had WLS about the same time I did and wrote this cookbook. It is now sold at Grand Health Partners in Grand Rapids (which is what MMPC Weight Loss used to be).
1 c. all-purpose flour
2/3 c. Splenda
1/2 c. whole wheat flour
1/2 c. whey protein powder (I use AnyWhey)
1 tbsp. baking powder
3/4 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. ground cloves
1/4 tsp. salt
1/4 c. finely chopped walnuts
2 tbsp. chopped raisins (I don't chop raisins, I just dump some unchopped raisins in ... who chops raisins)
2 c. chopped unpeeled apples (about 2 large)
1 1/2 c. fat-free sour cream
2 beaten eggs
1/4 c. unsweetened applesauce
In a large mixing bowl, combine the first 13 ingredients. In a smaller bowl, combine the remaining ingredients and add this mixture to the large mixing bowl, stirring just until everything is moistened. Bake in 15 sprayed muffin cups (or use the muffin paper cups, or silicon unsprayed muffin cups) at 375 degrees for 20 to 25 minutes. Cool for 5 minutes beofre removing the muffins from the pans.
Recipe note: This recipe makes 15 muffins at 112.6 cals., 5.7 g of protein, 2.1 g of fat and 18 g of net carbs each.
My own note: For some reason, my oven needs to bake these longer; it took 28 minutes. I also add just a little more applesauce (about maybe a tablespoon) because protein powder tends to dry out the muffins a little, which may be why I need to bake longer. Anyway, watch and check your muffins.
