Alright, guys and girls.........it is Monday and so we all know what that means!

The topic for this week is something that someone gave me idea for......your favorite breakfast recipe. What ever it is just jot it down and let us know what you like to have for breakfast and how you fix it.

Remember one recipe per person so we don't run out to soon.......after all we are making a book here, remember?

So let's gather our favorite breakfast recipe and get ready to share it with our OFF siblings.

                    It's not what you gather, but what you scatter

Hi Brenda,

This is an easy one, but kind of hard too. There are two breakfasts I have every day, switching between the two. So, I guess I'll toss a coin!

Okay, my breakfast burrito/taco it is.

Once a week I brown and drain one lb of turkey breakfast sausage so I'll have it ready. 

Then, I put 2 tbs of the turkey into a skillet to warm, then add 1/4 cup Southwestern Eggbeaters and cook till set. In the meantime, warm a small whole wheat tortilla in the microwave for about 20 seconds.. When it's warm, put the egg/turkey mixture into the center of the tortilla and wrap up. Sometimes I'll add a bit of shredded cheese, maybe a spoonfull of salsa too.

HAHA!  My very favorite thing for breakfast, no kidding, is my Eas AdvantEDGE Cafe Caramel protein shake.  Many mornings I wake thinking this is the day I have something different, but NOOOO.  I've tried the chocolate flavor and while it's good, it's no cafe caramel.  The vanilla and strawberry flavor are nasty.

I rarely make egg(s) over easy, scrambled eggs make me gag.

Here's a recipe for a pretty good pancake:

Oatmeal/cottage cheese pancake
1/3 cup oatmeal pulsed in the magic bullet into a flour consistency
1/3 cup low fat or fat free cottage cheese
1 egg
1 - 2 tbsp. milk
vanilla extract or cinnamon or whatever flavoring you choose

Cook in a nonstick frying pan (you can use a little butter).
Enjoy with sugar free maple syru***** sugar added jam

Good Morning Brenda....I see you are remembering alot better.  You must've taken your dose of Phillips Milk of "A.  LOL...I got such a kick out of that one that I just had to post it here.
I do not have any bkfst recipes except the usual egg bakes and such that I used to do before WLS but now I usually have a protein shake, cottage cheese and fruit or piece of cheese.
Thank you for posting Mouthwatering Mondays.  I have gotten alot of ideas and recipes from this and appreciate your efforts in  doing this.  Hope your day is great, just like YOU and  I send Love and Good Wishes to all the rest of my OFF buddies here.

I usually don't spend time making breakfast because I never seem to have time for it, but the breakfast burrito sure sounds good, especially when you precook the sausage to make it easier. 

Most mornings I have either a yogurt with about 1/4 cup of Kashi Go Lean sprinkled on top or if I walk when I first get up I'll make a protein shake with a yogurt blended in it.  It lasts all morning.


All you need is the plan, the road map, and the courage to press

Hello Brenda.....here goes.....

Weekend breakfast.....Dwayne and my favorite...make the amount you want. We don't measure anything.

Egg Scramble ???

Saute onions, mushrooms, green,red,orange and yellow peppers. 

Cook small amount of southwest flavor hashbrowns.

Cook bacon OR sausage (small pieces).

Mix all the above together. Scramble in eggs, coo****il eggs are done. Turn off heat. Sprinkle w/ shredded cheese. Let cheese melt and serve.

Enjoy!!

I am such a creature of habit, it's either wt. control oatmeal made with skim milk and a tbsp. of chunky peanut butter, or carb master yogurt with 1/4 cup of Kashi.....  No exciting recipes here....sorry!

Nutella for breakfast? You bet! These nutella waffle sandwiches are surprisingly healthy, thanks to the low-sugar, whole grain waffles. These Nutella sandwiches also make a delightful and healthy after-school snack.

Prep Time: 10 minutes

Ingredients:

  • 4 frozen whole grain waffles, such as Vans 7-Gran or Flax Plus
  • 1/4 cup Nutella
  • 1/2 cup sliced fresh strawberries (optional)

Preparation:

  1. Toast waffles according to package directions.
     
  2. Spread nutella on one side of each waffle.
     
  3. Top two of the waffles with sliced strawberries. Place remaining waffles, Nutella side down, on top of the strawberries. Cut in half and serve.

Egg muffins. 

Beat eggs with a little milk or a tablespoon or two of water (number of eggs depends on how many muffins you want to make)

Pinch of salt and pepper

Mix in whatever you like (minced broccoli, spinich, veggies, cheese, sausage, ham, etc)

spray muffin tin with pam

fill cups about 2/3 full

bake at 325 about 15 minutes or until done

easy to make ahead and take to work for breakfast
