Veggie Medley
Cut up yellow Squash, Zucchini and sweet onions, or spring onions. Toss with Chef Paul Prudhommes Magic Seasoning Blends ( I like the Blackened Redfish).
If you are cooking inside put in non-stick fry pan with a small amount of olive oil and saute until it is the right consistance for you. (depends on how small you cut it up)
If you are cooking outside on the grill place in a foil packet with a couple of pats of butter and place on the grill for about 20 minutes. (again depends on how small you cut it up)
Makes a great side dish.

ASPARAGUS CASSEROLE | ||
2 (14 1/2 oz.) cans cut asparagus, drained 1 1/2 tbsp. butter, melted 1 tbsp. flour 3/4 c. milk 2/3 c. Cheddar cheese, grated 1/8 tsp. salt 1/2 c. Ritz crackers, crushed 1/2 tbsp. butter |

Preheat oven to 325 degrees. Place cut asparagus in casserole dish. In small pan over medium heat, melt butter. Add flour, then add milk gradually. Cook slowly until thickened, stirring constantly. Add cheese and salt. Pour sauce over asparagus, sprinkle with cracker crumbs and dot over top with butter. Bake 40 minutes. |
I know the rule is one recipe per person but I just got this one from a friend today and it was a big hit at dinnertime.
I made them tonight for dinner and my teenage son who hates mushrooms ate 4 of them. He figured out they were veggie burgers but didn't know they were made with mushrooms.
They are good the way the recipe reads but I always tweak my recipes. Next time I may add a little garlic and Parmesan cheese and I may try a couple squirts of Liquid Smoke. Also, the original recipe called for flour but I substitute soy flour.
Tonight was a vegetarian dinner, I paired these burgers up with Eggfaces Italian bean salad.
Mushroom Burgers
3 eggs slightly beaten
3 cups chopped mushrooms( I put them in food processor)
1/2 cup soy flour
1/2 cup bread crumbs
1/3 cup chopped onion
parsley, salt, pepper
In a bowl, mix eggs, mushrooms, flour, bread crumbs onion and spices. Mix well. shape into patties. In Pam sprayed skillet brown on both sides.
I put BBQ sauce on the family's burgers. You can serve these on buns for the family, just like regular burgers.
