stuffed green peppers
serves 6
INGREDIENTS
- 1 1/2 pounds lean ground beef
- 1 onion, chopped
- 3/4 cup uncooked instant rice
- 3/4 cup water
- 1 (14.5 ounce) can peeled and diced tomatoes with juice
- 1 (14.5 ounce) can stewed tomatoes, chopped
- salt and pepper to taste
- 6 large green bell peppers
- 1 (16 ounce) jar spaghetti sauce
- In a large skillet or medium stock pot, brown the beef and onion over medium heat. Drain fat. Add rice, water, diced tomatoes, and stewed tomatoes. Season with salt and pepper. Simmer until rice is tender. Preheat oven to 325 degrees F (165 degrees C).
- Cut the tops off the bell peppers and clean out the seeds and membrane. (Note: You may have to slightly slice the bottom of the peppers to make them stand up.) Fill peppers with meat mixture.
- Place in a casserole dish and bake in a preheated oven for 20 minutes or until peppers are as tender as you like. Served topped with spaghetti sauce.
I love beef cooked all kinds of ways. Last week I was craving beef so bad, all I could say was "I NEED COW!" I broil steaks and eat off them for a couple of days, roasts go in the oven or in the crock pot, ground beef is turned into meatballs, meatloaf, or spaghetti sauce. I've learned to cook smaller amounts of beef. Because of his high cholesterol level, George chooses not to eat much beef, he eats more fish. This weekend I cooked ground beef with taco seasoning and added a can of drained black beans, wrapped the mixture in wheat tortillas with cheese, topped with enchillada sauce and more cheese, baked in the oven for about 20 - 30 minutes.
One of my favorites is:
1 chuck roast
2 - 3 ribs celery, chopped
2 medium onions, chopped
3 cloves garlic, chopped
1 can Hunt's light spaghetti sauce
1 can diced tomatoes
bay leaf, optional
Brown chuck roast, add chopped veggies, when the veggies are somewhat cooked, add spaghetti sauce and tomatoes. Simmer on med-low heat until fork tender.
I eat this sprinkled very generously with Parmesan cheese.
OK, now I've made myself hungry!

Pepper Steak Oriental (Crock Pot)
1 lb. round steak, sliced thin
3 t. soy sauce (lite)
1/2 tsp. ground ginger
1 garlic clove, minced
1 green pepper, thinly sliced
4 oz. can mushrooms,drained, or 1 cup fresh mushrooms
1 onion, thinly sliced
1/2 tsp. crushed red pepper
Combine all ingredients in slow cooker.
Cover. Cook on low 6-8 hours.
Serve as sandwiches with provolone cheese or over rice.
(I eat it plain )
