Mouth Watering Monday Chili
Ok, I didn't notice Brenda's request for chili recipes on Monday but I have a doozie. One of the ladies brings this to work every time we have a food day. She calls it Playboy chili because her husband got the recipe out of the Playboy magazine. This is some really good stuff. It's completely gone every time she brings it and it won the chili cookoff at work a couple of months ago.
3 cups diced chicken
1 bunch green onion, diced
1 yellow bell pepper, diced
1 red bell pepper, diced
saute the above in a little oil until chicken is cooked
Add
2 cans great northern beans, undrained
1 can diced black olives, drained
1 can chicken broth (I'm wondering if this is a large can of chicken broth, not sure but I'll find out)
1/2 - 1 1/2 cups of salsa (anything from mild to hot according to taste)
1 brick of jalepeno cheese, cubed so it will melt in the chili
the cheese makes this kind of spicy so be careful about how hot the salsa is and how much you add.
cook on low about 1 - 1 1/2 hours or this is good in the crock pot cooked for several hours
