good morning OFFers

well i guess out of sheer boredom ive been doing a little bit of cooking lately.

i made a nice salad this weekend that is weight loss friendly

1 can chick peas, drained
2 ribs celery, cleaned and sliced
1/2 of a small red onion, diced
1/2 of a tomato, scooped out the seeds, and then diced

put all in a  big bowl and mix

you can add any dressing you like and marinate for at least one hour.

it was colorful and tasty and im sure if you prefer another type of bean it would work just as well

for the record, i made a mustard vinagrette, i just felt like that yesterday

i used 1 tablespoon mustard, some parsely and dill (dried) dash of salt and pepper,  2 tsp. lemon juice and a scane 1/4 cup of extra virgin olive oil and whisked it all together, ended  up using about 1 tablespoon rice vinegar  also, as i felt it was too oily.  i would normally use bottled low calorie italian dressing but i was experimenting.

it was a big success, my sister took some home because she enjoyed it so much and mom liked also.

i have a nice quiche recipe i found in a magazine, as soon as i find out where i put it, will post also.  i made it without the crust and it was yummo.

Hey Jacki,

this sounds wonderful!  My son and his dear wife are vegetarians and I'm always looking for things to make when they come. It would be great for me to take to work as an afternoon snack, too! 

I make one similar witih black eyed peas. Good ol' beans....so versitile!

I'm back

I went to caloriecount.about.com and plugged in the ingredients, changing the 1/4 c olive oil to 2 tbs and here are the numbers for 6 servings. I guessed at that, but that's about what one of "our" servings would be, don't you think?

Cals:  138
Fat: 5.9 grams
Sodium: 221 mgs
Carbs: 17.8 grams
Fiber: 3.7 grams
Protein: 4.2 grams

Jacki, that sounds so good. I am going to try to make it sometime but I am going to use black beans. I just can't stand chick peas. Never could and I doubt that I ever will. ha ha

The dressing sounds really good too. I have never made dressings before but I think I might try to do it. I just bought some balsamic vinegar last night and I do so love balsamic vinaigrette. I might give that a try.

Sometime I will do the Mouthwatering Monday for dressings. I think that might be a good one don't you?

thanks love chick peas in anything.have you try them drain and roasted in the oven there are like peanuts to me
