Mouthwatering Monday.........

And the topic is.........Salads.

Whatever kind is it is up to you. It can be lettuce, vegetable, fruit, you name it and it has salad in it then it counts.

Remember........just one recipe per person. That way if we have this category again......and I am sure we will.........we have them to go around.

I have one today.....that is a new one lately.

Cucumber Salad

1 cucumber
1/4 to 1/2 medium sized red onion (to your taste)
2 small tomatoes (or 1 large)
handful of olives (whatever kind you like)
Balsamic vinaigrette dressing
Feta cheese

Peel the cucumber and remove the seeds from both the cucumber and tomatoes. Cut everything into small pieces. I slice the onion into thin slices. toss in the feta and pour about 1/4 cup of the dressing over the salad and mix.

So......get out your recipe  box and let's get this week a going!

                    It's not what you gather, but what you scatter
                        that tells what kind of life you have lived.

I LOVE SALADS!!  USED TO EAT IT ALL THE TIME BEFORE MY SURGERY.  NOW AFTER SURGERY, I UNABLE TO EAT IT ANYMORE.  WHEN I EAT LETTUCE, I THROW UP SOME OF IT AND THEN I PASS THE REST THE OTHER WAY (IF YOU GET MY DRIFT).  I DON'T KNOW WHY THAT HAPPENS.
I LOOK FORWARD TO SEEING OTHER SALAD RECIPES THAT HOPEFULLY WILL STAY IN MY STOMACH.

THANKS,
JOY

hi joy

i could not eat salads early out.  give it some time and try again

what i would do is eat some cucumber slices with the seeds cut out, and ate some tomato the same way.

it was a long time till i could eat lettuce, and usually romaine or a soft leaf lettuce work for me, not iceberg

maybe u could make a salad with some other type of ingredients, look online there are so many recipes and eggface who posts on the main forum has wonderful recipes.

good luck, jacki

It was a very long time before I could eat salad.  I got sick on the lettuce also.  It was probably a year before I could eat it and even now I still get sick once in a while.  Your new tummy will settle down in time and you will be able to eat those things again.

my favourite salad:

* romaine lettuce, cut into narrow strips (sometimes I also include baby spinach leaves if I have them)

* diced fresh tomato

* finely diced celery

* shredded carrot

* finely-diced cold cooked meat, like chicken, turkey, leftover steak or porkchop

* roasted & salted sunflower seeds

* roasted & salted pumpkin seeds

* almond slivers

* raisins

* dried cranberries/blueberries

* shredded OLD cheddar cheese

 All topped with Renee's LIGHT poppyseed dressing

This salad makes Rufus PURR!  However I always seem to make way too much (I get carried away with ingredients) so I usually end up putting half away, tightly sealed for my next meal...JB won't eat it...he says he doesnt like fruit on his meat. So I don't have any excuse that there's nothing to eat...there's usually half a salad sitting there waiting for me.

My favorite is:

Romaine lettuce cut in strips

dried cranberries

walnuts diced

sliced thin apples

feta cheese

black olives diced

onion sliced thin

boiled egg sliced thin

The dressing is olive oil and red wine vinegar.  I usually put a little sugar in it to balance it out.

Very good.

Crazy bean and cheese salad

1 can cut yellow wax string beans
1 can each garbanzo, black beans and kidney or pink beans
1 can corn
diced red onion
1 lb diced bite sized sharp cheddar (or your favorite cheese)
