Taco Soup !!

I made Betsy's taco soup tonight and it was INCREDIBLE.. yummmyyyyy. I did everything in the Weigh****chers version, except.. I added a second can of HormelsTurkey chili w/o beans, I wanted a good serving of meat. I amcounting it as 100 calories a cup. Then I  added 1/4 cup shredded 2% chedder cheese on top( 80 calories) and cut up 1 multi grain tortilla into small strips, put it in a hot oven until crispy. I put 1/4 of them ( 35 calories) on top. What a great satisfying meal for a cold night like tonight and it made a big panful, I can share with my mom and grandkids and still have enough for a few days..Thanks for sharing, Betsy

Hey Deb,

here's a link to the one I make. I do add a couple of cans of water to it as it can be more like chili than soup

Oh, that goes without saying  LOL.  I think I could eat garli**** cream!  That's if I could eat ice cream....

Yep, I add it in when I'm browning the beef/turkey and onions. We're still eating on Monday's pot, but that's ok. Great for these cold days.

I'm going to have to try adding Hormel chili. I usually just brown some hamburger with seasoning and chili powder and add it in. Although I like the crunch of the crispy tortilla on the top, sometimes I add a couple torn into small pieces to the soup. It gives it a faint corn tortilla taste among all those other flavors!

here you go brenda...

TACO SOUP

3 cans chicken broth

1 can pinto beans

1 can black beans

1 can diced tomatoes

1 can rotel tomatoes with green chilies

1 can hormel turkey chili w no beans

1 cup salsa

1 tablespoon taco seasoning

1 teaspoon cumin

1 cup carrots

mix all cook about 2 hours
