Making the Soup
Yes, Jeannie - gotta love the soup. I do mine a little different. I cook Beef with onion & seasonings in the crock pot (a chuck roast) till it shreds to pieces. Then I put it in the refridgerator overnight. The next morning, I remove all the fat that has risen to the top, then freeze the beef in small containers. Each time I use a container, I add different vegetables and have a different kind of soup.
I started doing this when my Mother's blood pressure got out of control. It was the only way I could make a soup with NO Salt. It's perfect for us & perfect for sharing.

Jeannie, I have always cooked in bulk. Now with just two of us, George calls it food overload! I usually cook two or three big pots of whatever on the weekend, usually gumbo, chicken or beef stew, roast beef, some sort of soup, or spaghetti sauce, eggplant parmesan... We eat a couple of dinners from it during the week, then I freeze the remainder. The freezer door is stocked full of 1/2 cup and 1 cup containers of "my" lunches or dinners when I don't want what George is having. It's so convenient to open the freezer, grab and go in the morning.
If we happen to have gone fishing that weekend, we eat fresh fish for a couple of days then freeze the rest. Now with hunting season, George is coming home with lots of protein.
This past weekend I made a large pot of lentil soup. Today will be the third day I've had it for lunch - I supplemented with a boiled egg on Monday, a chunk of cheese Tuesday, and I'll have a bit of salad with baked chicken today.
George has a large vegetable garden, so we also have lots of fresh/frozen veggies (green beans, corn, eggplant, broccoli, cauliflower, okra. I took out a quart bag of eggplant Sat. and cooked it with onion, garlic, and ground beef - YUMMY. You know, gumbo sounds good, maybe this weekend I'll make some.
