Truffles anyone? SF Recipe
Ingredients:
8 ounces cream cheese (light, non-fat or reg, don't use whipped as it does not work with recipe), room temp
8 ounces SF Chocolate Chips
Beat cream cheese till light and fluffy
Melt Chocolate Chips
Blend together until well combined (a hand held mixer for this part as well as beating the cream cheese originally makes it easier)
Place in fridge until set, at least 30 minutes, found it better to handle when it sat in there for a few hours.
Roll mixture into bite size balls.
Roll into topping of choice....
Some suggestions: crushed peanuts, flaked coconut, a mixture of cocoa powder and splenda put in the foodprocessor. Other ideas would be to roll them in more melted chocolate (would freeze or at least re chill the balls before doing this), sf pudding powder...or whatever creatively comes to mind.
Put back in fridge and chill until serving time.
**Note: As you work with them, the mixture does become warm and soft...so be prepared to have chocolately hands, work quickly, or work in small batches. The outside does need to get a little soft so the toppings stick depending on your choice.**
