EGGS!

What is your favorite recipe for those little eggs? Do you make something special for breakfast like a breakfast casserole or quiche? What about deviled eggs or as Bill's cousin calls them angel eggs? Take your pick and post your favorite recipe or one that you have been meaning to make.

Let's put on our thinking caps and look through our recipe boxes or if you are anything like me just a tiny piece of paper that is laying somewhere.

We are making yet another chapter of our infamous cookbook.........the one that Martha Stewart will be lining up for! Maybe she will be standing next to Emeril Lagasse or Rachael Ray.......who knows?

I NEED RECIPES FOR EGGS, ESPECIALLY "SOFT" ONES FOR NOW.  THANKS FOR BRINGING IT UP.  HAVE YOU MADE A FOLDER OR SOMETHING FOR THE RECIPES THAT HAVE BEEN LISTED ON "MONDAY'S TOPIC"?  I WOULD LIKE TO GO OVER IT TO SEE IF THERE IS ANYTHING I CAN USE.  THANKS FOR YOUR HELP.

Joy, I have copied all of the recipes from the past threads. I haven't put them in a folder since I have no idea how to do it.......I am as computer illiterate as a person could be. It is all I can do to do the simple things that I do on this dang old thing. ha ha

Let me know just what you are looking for and maybe I can help you out on that subject. Let me know and I will do what I can to help you out and now that it is out I am sure that others will help you out too.

I will pass this on.... for those that hate peeling hard boiled eggs and don't like the look of that grey stuff around the yoke...

Steam the eggs for 12 minutes... I use an old rice/veggie steamer....

Put the eggs into cold water for about 15 minutes... refreshing the cold water once during that time.

Peel the eggs by tapping the egg first on one end breaking it a little, then the other end, then rolling it on it's side gently causing a few cracks...

Here's the good part.... the shell practically falls off! ... they peel so easy.... and no grey stuff around the yoke so deviled eggs just look nicer....

You'll be amazed at how easy it is to peel eggs using this method..... only way I do them now!

Thanks a lot, Marc, for your information. I will be including that tidbit in our OFF The Kitchen Wall cookbook.

Do you cook at all? If so why not include something in the book? We would love that.

I put salt in the water I boil my eggs in. Put the eggs in cold water, bring to a boil then take off the burner and sit for 15 min. Run under cold water until cool enough to handle. I crack and roll mine like Marc describes and the shell just falls off. And I never have that dark yucky stuff around the yolk unless I leave them whole in the fridge for a couple of days.
