Baking for Thanksgiving

It's a good thing I hate pumpkin and pecan pies! I've been asked to bring 3 pies to a big family reunion and Thanksgiving dinner about 8 hours away.

My question is to you, how long will the pies last and taste good. If I bake them on Tuesday and transport them in car in ice box, will they be OK for Thursday? I know that is a dumb question, but I don't have any idea.

Lest anybody be worried about a WLS person baking, I'm stable having lost all the weight the doctor wanted.

I have an ice box for camping and have frozen plastic bottles of water to put in the box. Don't want to risk melting ice ruining my pies. I've never made a pecan pie before - an inlaw requested one and I thought I'd be nice, but she might be sorry, it might be lousy.

Have to go to PT this morning and work on my back - pain in lower back and down my legs. Traveling for 8 hours in car is going to be challenging.

Have a good Thanksgiving! Isn't it fun to watch everyone else eat 3-4 times the amount we do? I can't believe I used to eat like that and even more when no one was looking.

Your pies should be fine if you keep them refrigerated.....

Why don't you just make the sf pumpkin and pecan pies...they are awesome, need to be refrigerated anyway because of the no sugar.... I get nothing but rave reviews on my pies....and use Splenda and SF Maple Syrup for sweetening.

Janet: I never thought of sugar free pies - that's an excellent idea because my 5 yo niece is a hellion and doesn't need a sugar high.

Rudie,

Anytime I need to tak something for a function, I always take something sugar free...and label it as such.  You will never be the ONLY person in the room that wants so badly to eat dessert and can't.

My desserts are usually the first to go.

pies should be fine as long as they stay cold which in many parts of the country is easy these days.

im making pumpkin mousse my family are not pie eaters.  so im off the hook there.

i would like a bite of pumpkin pie though, but the mousse will have to do, silly to make a pie for myself, and i used to back when and most went into garbage cause nobody else wanted it.

not sure what other desserts we will have, hubby and older son not dessert eaters, and not sure what younger son likes anymore, hes been away from home so long.
