Two people asked me for this recipe when I mentioned it yesterday on Linda's What Are We Eating post.  Here it is:

Baked Crab Rangoon

4 oz reduced-fat cream cheese, at room temperature
1/4 c. light mayonnaise
1 6-oz can crabmeat, drained & flaked
2 scallions, chopped
12 won-ton wrappers

Preheat oven to 350F. Mix cream cheese, mayo, crab and onions.

Spray 12 (2-1/2") muffin cups with cooking spray. Place 1 won ton wrapper in each cup, allowing the edges of the wrapper to extend above the side of the cup. Fill evenly with crab mixture.

Bake 18-20 min. or until edges are golden brown and filling is heated through. Serve warm.

Enjoy!

JEAN,
THANK YOU SO MUCH FOR THE RECIPE!!  I HAVE FILED AND PRINTED IT.  I AM NOT VERY GOOD AT MATH, DO YOU BY ANY CHANCE HAVE THE NUTRITIONAL VALUE TO THE RECIPE?
THANKS,
JOY

Joy,

My estimate is that each "rangoon" has:
77.1 calories
3.7 g fat
153.5 mg sodium
5.9 g carbs
.2 g fiber
.3 g sugars
4.7 g protein

I can't eat more than 2 at a time.

These would great party appetizers.

JEAN,
THANK YOU SO MUCH FOR FIGURING THE NUTRITIONAL VALUE OUT FOR ME.  IT IS VERY HELPFUL.  NOW, GOT ANOTHER QUESTION -  CAN I FREEZE THIS AND THEN BRING OUT TO COOK OR SHOULD I BAKE THEM THEN FREEZE?
THANKS,
JOY

This sounds good ... I'll bet if you use the silicon muffin cups, you wouldn't even have to spray the cups. Those things are great!

A recipe I love with crab is a crab dip. Take crab meat, cream cheese ... soften the cream cheese, mix in the crab meat (make sure you get out the bones and drain well). Form in a bowl. Let harden overnight. Just before serving, pour ****tail sauce over it. Serve with crackers. It's really good, full of protein.

My ex-SIL used to make this, and I made it for a work get-together last year ... unfortunately, not enough people ate it, and I was stuck with a lot of it. Well, I love it so I wound up eating it for my snack when I got home. Then I started making it for myself. Haven't had it for awhile and might have to make it again. I have everything I need anyway.
