Mouthwatering Monday topic for this week......
The Mouthwatering Monday topic for this week is soups. It is into the soup weather and we can always use a new recipe for this. I know that I can and I bet that I am not the only one.
So on with the thinking caps again girls and boys and let's make a whole long list of the soups recipes for the "OFF The Wall Cookbook". We are going to have a good one that is for dang sure! We just keep gathering and gathering them. And trust me when I say that they are good ones too! They sure make me hungry!
So I shall see you all in the morning when we gather around the old computer and chat! Your lesson for today boys and girls is to narrow down to your bestest in the world soup recipe! Only one per person so we can repeat this topic again later in the winter.

Well, my favorite is not exactly hot weather fare: GAZPACHO
You can find many good recipes on the web. I whip up a blenderful once a week (cukes, fresh or canned diced tomatoes, green pepper, red pepper, mild onion, little garlic). This is my lunch or snack most days. Always with a dollop of Greek yogurt for the extra protein. If avocados are in season I throw a little bit in, diced, before serving.
I have a sleeve, and have had no trouble with gas, so I can eat this, virtually no carbs. Not sure if other surgeries would preclude it, but it is YUMMY.

Hi, thanks so much for posting this recipe. We have this thread every Monday morning so if you could, please re post this in the morning under the topic Mouthwatering Monday~Soup. We change topics each week and so I usually post the new one the day before so everyone has a chance to look up their recipe that they are submitting. We do ask that you only post one recipe each week. We will be posting the same topic over a period of time so that we can add more of them. Sometime we are going to make up a OFF cookbook and it is going to called "OFF The Kitchen Wall Cookbook". We look forward to your posts that will add more to our book.
Hi Sweet Brenda....it's Tuesday...but I thought I would add to your post.....I have been so busy lately I haven't been able to post.
I make soup AT Least twice a week......it is so easy that I really don't have recipes.
I start with the "Holy Trinity" for most all soups. All amounts to taste.
chopped celery
sliced carrots
chopped onions
soften for awhile in olive oil in big pot
salt and pepper
Add chopped garlic, don't add too soon or it will brown and then get bitter.
Add a protein, beef, chicken, fish, beans
Add broth, chicken, beef or vegetable
Add a starch like potatoes, even sweet potatos are good
I don't add noodles et****il I am serving, they gett too soggy and absorb too much of the broth.
Add seasonings that appeal to you and the protein....even packets of seasonsings are good, like Lipton soup mixes.
cook in the big pot for a few hours. and use toppings if you like..such as sour cream, cooked bacon bits etc.
I frequently make cornbread to go with it....Jiffy mix of course.
I enjoy making soup, Especially this time of year.
Love, Marti
