Mouth Watering Monday ???

I've been busy and not able to post much. Missed posting a dessert on Monday, so here's one.
Ricotta Delight
1/2 cup low fat ricotta cheese
1 packet Splenda
a few drops almond extract
Mix well and enjoy. Almond is my favorite, but you could use any extract you like. I would think coconut or rum would be good.

Ohhhh That sounds so yummy and easy .... I missed the desert one also......
I would like to see a topic for healthy snacks... I get the munchies and want something crunchy but end up eating too many nuts... or trail mix. Could use a little help in this area...

Debbie, thanks for the recipe. I copied it and put in with the other ones from that topic. I am saving all of them for a cookbook to be called "OFF The Kitchen Wall". I thought that was a fitting title.
This sounds so good. I am going to make this coming week. I think it would be really good for a dessert or a snack. The protein in it would be good too wouldn't it? I have never cooked with ricotta.

Hi Brenda, just getting around to seeing this. Not much computer time lately. "OFF The Kitchen Wall", what a wonderful title! I add a spoonful of ricotta to my serving of spaghetti sauce. It cuts the acidity and adds extra protein. On the rare occasion I make lasagna, I layer some with the other cheeses.
