Well I can't say Good Morning to all...  because I just got in a little bit ago and am ready for BED
Not a bad night at work, and I work again tonight.

I never fixed the tuna salad yesterday so that is part of my plan
And I have a dish of baked ricotta in the freezer for one meal.
So - I think I will see how I feel when I get up as to what else to take to work.  I will eat something here before I leave tonight.  And it may be a low carb Slim Fast - that is easy enough.

 Hmmmmm        Baked ricotta....  tell me more, please.  How do you fix it?  Sounds yummy.  Millie

I got the recipe off eggface's site...  But it is:

8 oz of ricotta cheese
1/2 c of parmesan cheese
1 egg
Italian spices - I used oregano, garlic salt, and garlic
 
Mix all together and put in a oven proof dish sprayed with Pam - I have 4 small rectangular dishes that held 1/2 c of the mixture

Then top with marinara sauce - I used spaghetti sauce, then chopped some mushrooms on top

Top with reduced fat cheese or whatever you like - I used 2% shredded mozzerella

Bake for about 20-25 minutes. 

I froze 2 dishes and they have worked wonderfully, too.  Tastes like a lasagna without the noodles or a canneloni without the noodle. 
Could be adaptable to include sauteed peppers and onions or even squash for a veggie dish.

whoo hoo cheeky girl!  LOL

We've been up since 6 and out the door at 7 this am for a minor  "Nana" emergency at our daughters this am, good thing she lives close.  Cheyanne is getting her 6 yr molars and running a temp and would not cooperate with mommy to take any tylenol. She wanted Nana to fix it. So off we went. She is runing fever 101 but took the tylenol fine for me even let me put some anbesol on the molar.  Mommy is shaking her head.

So we are off to the grocery store soon to get some healthy quick on the go meals for me.  I did have a fantastic protein shake last night for dinner.  A friend from the Illinois board,  is concerned about my eating also. Insisted I take the rest of a canister of Body Tech Whey Pro 24 home and try and get a shake in each day.  I made one for dinner late last night with 1/2 c frozen mixed fruit. It was really yummy.

Today:
B- Coffee, Special K Protein Meal Bar
S: String cheese
L- Salad and tuna
D: Chili made with Morningstar Soy crumbles ( hubby is making it)

I have the girls again today but they will be here which will help me manage my food better.  The hubby is going  to spend some time at our daughters fixing some stuff.

Hijack!  My 20 years old daughter's name is Cheyanne spelled the exact same way!

Hey...that is a first for us!  I wasn't sure about the name Cheyenne....I asked my daughter what if the child doesn't like it as she grows up and I didn't want people to call her Chey..... So she decided to spell it Cheyanne in case she wants to use Anne or Annie when she is older but guess what her personality is not an Anne  she is definately a Cheyanne  and we call her Chey for short  LOL!!! sometimes moms know best not grandmas!   Paulette

     Hump Day ????   Ohhh  Myyyy  Linda,  too funny.  What timing.  I just met a man on E-harmony...  we hit it off very well.  Not exactly "hump day" but the thoughts are there.
