My Body finally gave up.....4 pounds yesterday....
Hi Shirley.....well, my potato salad is called like a French Potato Salad. I watched the Barefoot Contessa make it once and I liked the looks of it.
This is the way I do it.....I think...
I boil some potatoes for about 20-30 minutes, [bascially whatever I have on hand, she used white boiling potatoes and red potatoes].
I drain them in a colander and put a towel over them. [they will steam a little] when they are cool enough to handle [about 10 minutes] I slice them or quarter them, or whatever I feel like.
Then I put the potatoes in a bowl and put a little chicken stock [couple of T. and a good splash of white wine and let it soak in]
Dressing:
White wine vinegar---about 3 T
salt and pepper
About a teaspoon of Dijon mustard
then whisk in olive oil....about 10 T
Then I throw in some fresh basil [tons in my garden] or dill or parsley AND some sliced green onions.
Salt and pepper and then serve at room temperature.
