OT: Zucchini Lasagna recipe

l lb. ground turkey
small onion, chopped
1/2 gr. pepper, chopped

Brown together until turkey is no longer pink. Add a med. jar of pasta sauce (I used Prego, any brand is fine) and
a tsp. of oregano, or italian seasong....simmer for a few minutes.

Slice in thin rounds, a medium zucchini, with skin on.

In a small bowl combine:
1 egg beaten
1 16 oz. container of low fat ricotta
1/3 cup. parmesan cheese
2 Tbsp. dried parsley

In a sprayed 9 X 13 glass pan, layer as follows:
small amt of sauce in bottom, then
zucchini slices to cover whole pan (don't overlap)
1/2 of ricotta mixture -- I just dollop it on with a fork and smooth it around.
1/2 of meat mixture
about a cup of low fat mozzarella cheese, shredded
then start with zucchini again, ricotta, etc. End up with
generous amount of mozzarella cheese on top.

Bake at 350 for 45 minutes. Let stand for 10 minutes before serving to firm up.

I have no idea of nutrition numbers. ENJOY!

Thanks Pat for the recipe. I am going to try it but I need to buy some zucchini first. I guess that would be important to the recipe. lol

I have always wanted to try this kind of lasagna but never have. It sounds so good.

Brenda, I wish we lived closer together.  I have an OVERABUNDANCE of zucchini and would love to find someone to share it with.  People are starting to avoid me, knowing that I will probably hand them zucchini along with a smile......

You're very welcome for the recipe.....check with some of your friends or neighbors who have gardens....usually by this time of year, they are anxious to get rid of tons of zucchini!!!!

Brenda, Around here from July on. . .. if you leave home for more than 10 minutes there will  be a bag of large zucchini on your front step with no idea of where it came from!

it was delish and i am ashamed to say that i could have eaten more!!!!! of course, we sat and talked when we put our forks down --and it was very nutritious!!!!
