Waikiki Meatballs

A couple of people asked for this recipe, so here it is. It's from the old traditional Betty Crocker cookbook. 1 1/2 pounds ground beef (you could sub ground turkey; I used ground round this time) 2/3 c. cracker crumbs (or bread crumbs) 1/3 c. minced onion 1 egg 1 1/2 tsp. salt (I didn't use any salt) 1/4 tsp. ginger 1/4 c. milk 1 tbsp. shortening (I used some olive oil Pam ... really not necessary) 2 tbsp. cornstarch 1/2 c. brown sugar (probably could sub brown sugar splenda) ! can (13 1/2 ounces) pineapple tidbits, drained (reserve juice) (originally, this says syrup, but I never used the stuff in syrup and it always works fine) 1/3 c. vinegar 1 tbsp. soy sauce 1/3 cup chopped green pepper Mix thoroughly beef, crumbs, onion, egg, salt, ginger and milk. Shape mixture by rounded tablespoonfuls into balls. Brown and cook meatballs. Remove meatball; keep warm. Pour fat from skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add meatballs, pineapple tidbits and green pepper; heat through.  Serves 6. Yummy!

Elaine, thanks so much for sharing this recipe. It sounds so good and I am going to try it very soon. I am sure that Bill is going to like it too. I copied it and I am putting away for future refrence.

Hey good buddy,

I copied your recipe....but before I did I went and looked in my "ancient" Betty Crocker Cookbook, circa 1956 and it wasn't in that one.....bet yours in a bit newer than that!!!

Anyway, I will try it soon.
