anyone make their own Jerky?

Hi All, had some store bought jerky last nite and I'm retaining fluid from the sodium and msg in it. If you have a good recipe for jerky, without all the sodium and msg, I sure would appreciate it. Thanks and have a great day! Alice

I know, I like the beef jerky, but even tho' it is high in protein it's even higher in sodium. I too have trouble with water retention.

My son makes venison jerky, I'm not sure of his recipe, but he's stopping by later this afternoon and I'll ask him.

Alice, My husband makes jerky using teriyaki sauce, worcestershire sauce, hot sauce, liquid smoke, and some meat preservative powder he bought from www. sausagemaker.com.  He has TWO dehydrators, don't remember where he got them. I think you could substitute low-sodium soy sauce and Splenda for the teriyaki sauce and Worcestershire sauce. Jean

about 3 lbs. of meat (see instructions below)

2/3 C Worcestershire sauce 2/3 C of soy sauce 1 tsp. of black pepper 1 tsp. garlic powder 1 tsp. onion powder

Options 1 tsp. liquid smoke 2-3 tsp. Tabasco Sauce 2-3 tsp. crushed red peppers 2-3 tsp. sesame seeds  your favorite hot sauce to taste

Thank you soooo much. By the way, I got a wow of my own today. Seen the Nut. for the second time and I lost 8# in 3 wks!! I'm still pre-op and I just changed my eating habits to the way I'll be eating post-op! The appetite is still there but with all the protein, I'm not as tempted to eat the wrong things. She also told me that my job for the next 3 wks is to add more carbs to my diet....fruit, complex carbs, etc. I thought for sure with the water retention I was having today that I would;ve gained weight. As soon as I came home, I set my scale to the weight at the clinic. I don't weigh myself more than once a wk...don't want to fall into that mode of disappointment.
