Fish Recipes
I use this on swordfish but it would probably work on any kind of thick fish filet. It's the sauce that is "killer". 20 oz: Swordfish salt & pepper to taste 1 t olive oil 1 t lemon juice 1/2 C imitation sour cream 1/2 C plain yogurt 2 T lite mayonnaise 2 T dill, fresh, minced 1 t Dijon mustard 1 dash hot pepper sauce Wash and pat fish dry. Season lightly with salt and pepper. Combine oil and lemon juice; brush on both sides of fish. Place 1" apart on a light greased (Pam'd) baking dish. Cover and put in refrigerator. Dill sauce: Combine sour cream, yogurt, mayonnaise, dill, mustard and hot pepper sauce. Add salt and pepper to taste. Store in container in refrigerator. Nuke in microwave for 3 minutes and then check and 1 minute intervals after that. Fish should 'flake' or fall apart when done. Depending on the microwave oven, no more than 5-6 minutes. Preheat oven 350 degrees: Cook for no more than 20 minutes. When fish is done. Serve fish topped with dill sauce.
