ok, I'm a 100 % southern fried seafood type of girl.  What are some of your favorite non-fried seafood recipes.  Figure I had better go ahead and start with this now so I will not be in too much shock when I have my surgery.   lol

Good to get started early and test a few things out...  Fortunately for me, I love seafood  - and since it's so high in protein and so low in calories (if cooked correctly) it's a great food post op. My favorite recipe goes a little like this... I spray a pan with PAM and cook tilapia fillets for three minutes on each side.  While they are cooking I combine a can of stewed tomatoes, green olives, capers in a saucepan and heat it up. When the tilapia is finished (six minutes, seriously) I put it in a baking dish and add the tomato mix on top.  I put it in the oven for about 20 minutes at 350 degrees - its yummy, really Also, I wanted to let you know that the South Beach Diet cookbooks have really good, high protein recipes for seafood.  Hope that helps, Lou

Thanks for the recipe and for the cookbook recommendation!  Think I'll try your fish this weekend.

You are very welcome... hope you love it.  Feel free to improvise, if you like basil - add it, if you hate green olives - don't use them.  I found this recipe to be very flexible One more I thought of: 4 salmon fillets (or whatever fish you like) Baking sheet w/PAM and cook for about 20 minutes at 350 degrees While they are cooking, melt 1/2 stick of butter or margarine When it turns golden brown, add two tablespoons of balsalmic vinegarette and stir. Turn heat off Take fish out of oven Pour the butter/vinegar mixture over the fish and Top with capers and chopped tomatoes and serve this one is also yummy and makes a beautiful presentation Enjoy! This recipe works with almost any fish.  I've done it with catfish and salmon. DEVILED ONION FISH 1 cup onion, finely chopped (I put it in the food processor) 4 tbl Dijon mustard 1 lb. fish fillets Garlic powder & pepper to taste Preheat oven to 350F. Mix onion & mustard in a small bowl. Season the fillets with garlic powder and pepper. Spread the onion & mustard mixture over the fish. Bake 20 min.  Turn the oven to broil and broil until the onion is golden, 3-5 min. Makes 4 4-oz servings Jean

Shirmp, cajun seasoning.... AAAAAAAHHHHHH! (Sounds like Homer Simpson!) lol.   That sound great!  As you can tell, I don't do a lot of cooking at home anymore.  The kids keep saying they are going to hide my presents in the oven because the only time I use it is at Thanksgiving and Christmas.   All the recipes so far will be easy for me to cook for 1.

Hey Donna, We love fish, especially mahi mahi and talipia.  We also love Mexican food, so my easiest dish is a combo of both. heat a skillet and spray it with Pam.  Cook your fish on one side until it's edges are starting to turn opaque, then turn them and spoon your favorite jarred salsa over them.  Turn the heat down, cover and let coo****il they flake easily with a fork.  Cheap, fast and yummy!
