L: 2 oz. Shelly's Pizza Bites, 1/2 c.roasted cauliflower
S: 1/2 c. raspberry mango cottage cheese
D: 2 oz. turkey smoked sausage, 1/4 c. quinoa black bean salad
S: 1/2 c. mango custard

Here it is. Pretty high in calories, but good, fiber-rich, high-protein calories!

3/4 c. quinoa, rinsed & drained
1-1/8 c. water
3/4 c. canned black beans, rinsed & drained
3/4 c. cooked corn
1/4 red bell pepper, chopped
1/4 yellow bell pepper, chopped
2 scallions, chopped
1/6 c. lime juice
1/4 c. olive oil
1/4 tsp salt
1/8 tsp pepper
3/4 tsp cumin
1/8 c. fresh coriander leaves, chopped fine
Cook the quinoa in the water for 20 min. Fluff the quinoa with a fork and let cool. Add the beans, corn, peppers, and scallions.
Whisk the lime juice, oil, salt, pepper, cumin, and coriander together and pour over the quinoa mixture.
Serve at room temperature.
4 servings - 4 oz each serving

Good morning Dear Ones!
Oscar is on the warpath After all I've done for this little guy, he's being a pain in the butt (or should I say stomach region) again. There was a message on our machine when I got home yesterday. Our son, Danny, called to say he was planning to cook dinner for us - grilled pork chops, potatoes, and if I could, would I take care of the veggie. He comes home with the most beautiful, thickest pork chops I've ever seen and some red potatoes. I prepared spinach with sauteed mushrooms, garlic, and pepper jack cheese (Danny's recipe that the family loves). The pork chops were so moist, potatoes seasoned well...a few bites into the meal, and I had to leave the table . Shortly after, I started with stomach, chest, and shoulder pains. This went on most of the night. I tried sleeping in the recliner until 2:30, then went to bed and tossed and turned the rest of the night. So, either something didn't agree with Lil Oscar, or I'm stressed and don't realize it. Oscar behaves very badly when I'm stressed. I do have a doctor's appt this afternoon because my thumb, yes the one I just had surgery on 4 weeks ago, is red, swollen, itchy, and not bending as much as it did a few days ago. OK, yea, I guess it is stress!

S - ?? depends on how Oscar likes the soup, maybe a protein bar or another shake as those go down well
D - again, depending on Oscar and his shenanegans, maybe veggie stew with some type of meat or cheese

Linda, you quack me up.
I made two packages of SF pudding - that's a whole lotta servings. Figured it would be tasty mixed with cool whip and pumpkin. Tom doesn't like the pumpkin but went ape **** over the pudding, red raspberries and cool whip. He sure can eat, lots and lots too. It takes that much to fill up all 6'4" of him. I might be able to scrape up some pudding for myself tonight.
No menu changes. Same stuff, different day. All is good.
You have a good weekend Linda. Want to go out on the town with me? I'm tired of being good and we could find some trouble together. Partners in crime might cure both of us. Anybody else want to join? I'm dreaming of course. Sigh
