Good morning, good people...Friday is just around the bend. Here is my recipe,it is not an original one.but one I adapted for my food program.
CHICKEN BREAST SCAMPI  

 

2-3 lb. boneless chicken breasts (Market Day's work great!) Pam 3Tablespoons butter sub. 4 cloves garlic, minced 2 whole scallions, minced 1 tbsp. parsley, chopped 1/2 tsp. fresh dill (or 1/4 tsp. dried) 1/2 tbsp. oregano 1/2 tsp. salt 1/2 tsp. pepper

 

Preheat oven to 350 degrees. Cut raw, boneless chicken breasts into approximately 2 ounce chunks (like huge shrimp) and place in 9 x 13 baking dish that is sprayed with Pam. Melt butter in a saucepan over low heat; add remaining ingredients. Cook over low heat for 2 minutes then pour the mixture over the chicken breasts pieces. Cover with aluminum foil. Bake for 10 minutes, separate chicken pieces, and cook for another 10 minutes. Uncover. Place chicken under broiler to brown for 3-4 minutes.  Serves 4-6. I have with 3 Tablespoons of Brown rice, but is optional. Enjoy your day!

Sounds good, Linda.....I will try it soon, less the rice, which I have yet to even try eating....Maybe I'll get some brown rice and try it now.

I don't usually have scallions, but always have frozen chopped onion in my freezer, so will sub that. Think this would be good with shrimp too.

It is funny that rice is like a seasoning for me now. I have tried this dish with slivered almonds instead, and it is yummy that way too! Hugs!

Hi there Linda Lou! Same menu for me,,,but dinner is down the alley at our favorite Mexican restaurant. It is the ONLY food that goes down perfectly fine and feels good in the stomach. Can't eat lots which is good but is my most "normal" feeling, filling and tasting food at this point. So I do love it for that reason. I am doing a pain/sleep log to take to my doc. My brilliant idea to take charge of this crap. I am so sick of it. I too take hydro, but am very careful and stressed with all the issues about it. My doc is great and very supportive, but when she is gone for vacation or sometimes she does the Drs without Borders thing, I sometimes get grief from those that fill in for her. I am going to get a plan in place for me, in my chart, that these people can read and follow! Will let you know how it goes. Today is my Friday and I am HAPPY!!!! Take Care dear, Cheryl

I am happy to hear you are being pro-active, we must be. We should be treated with respect when we have real health issues. These people have things waiting for them down the road, I truly believe. Enjoy your food...smile.

Good morning to you, Linda dear. I hope that today is treating your right. It better be or a lot of people are going to be really angry. lol Today is going to be a stay at home and rest day since my back is hurting so bad that I could scream. It started out with the muscle spasms and now it is just a giant BIG pain. So things are staying very simple around here today. B: SF maple and brown sugar oatmeal w/o milk and banana L: ? D: 90% grond round meat loaf or something and veggies S: ? Not to decisive on things but at least I am on some of it. Whatever the question marks end up being is going to be good. I do know that for sure.  Sending you my usual thing which is.........love and hugs!
