Linda, I'm so glad to hear you are better.  You've been in my prayers. B - Jr. lunchable of ham, cheese and tiny Ritz crackers. S - protein shake and a cookie (One of our guy residents makes the most delicious cookies, and brought some for Admin. Assist. Week this morning) L - braised beef and a cheese stick S - yogurt D - going out to a fancy Italian restaurant for our AARP group's anniversary.  George and I each ordered a different entree and will share seafood canneloni (sp) and veal parm, comes with salad and choice of bread pudding or cheesecake.  I'll probably have a taste of both desserts and he'll have the rest. S - won't need one Busy Weekend with Ethan, ball game Sat., and fishing Sun.  Also Danny's b'day Sat (Ethan's dad).  I'll be making his cake - chocolate with chocolate frosting, YUK, I'll pass - Sat. morning so Ethan will have a party for his daddy.   Have a great day! Hi Jean - your menu sounds good - what is Pistachio cattage cheese pudding and also mango peach cottage cheese?  Also what is the recipe for Cottage cheese pancakes.  These things sound good to my - menu is pretty boring and need to add more things.   Thanks! Randa

Randa, PISTACHIO COTTAGE CHEESE PUDDING (You can substitute any other flavor of SF/FF pudding mix) 1 24-oz container FF/LF cottage cheese 1 small pkg Jello SF/FF pistachio pudding mix 1/4 c. Splenda or to taste Whiz in a food processor until smooth. MANGO PEACH COTTAGE CHEESE 1 c. mango, chopped 1 c. peaches, chopped 1 24-oz container FF/LF cottage cheese 8 oz Cool Whip Free or SF Cool Whip 1 small pkg Jello SF peach jello mix Stir well. AND ANOTHER GOOD FRUIT & COTTAGE CHEESE RECIPE: MANDARIN COTTAGE CHEESE 1 6.1 oz can juice pack mandarin oranges, drained & chopped 1 8-oz can juice pack crushed pineapple, drained 1 24-oz container FF/LF cottage cheese 8 oz Cool Whip Free or SF Cool Whip 1 small pkg Jello SF orange jello mix Stir well. I love you Linda my angel, and I hope they will help you soon.    Cup-o-ambition witha scoop of unjury choc protein. 20 gms.  B- 2 oz. 0 % Fage yogurt. S- Isopure protein drink. 40 gms protein. L- 1 ozTurkey lunchmeat and 1 oz string cheese. S- Isopure protein drink.  d- 1 oz FF refried beans and 1 oz mashed pears.  Fuzzy Navel protein drink, 24 gms protein.Yum! And of course, lotsa water. 4 multi vits, and I'm done.  I have to go to a memorial service for a wife of a friend of mine today.  She was only 47 years old, and died ofrom cervical cancer. and she leaves behind 2 sons, one still in high school and one in his first year at ASU.  So sad for the family.
