Whats New Sunday!!!! From Sunny Florida

Me again.  I made Maui Karen's Muffins today. They are yummy. I made them in regular cupcake pans and they made 24! I put them in freezer bags and froze most of them. My question:  I used the brown sugar which doesn't bother me but wondered about a substitute such as applesauce. Next time I make them I think I'll replace the zucchini with applesauce and omit or greatly decrease the brown sugar. Nancy B? What do you think? You're so good at this stuff.  I didn't put the raisins in them but used everything else. Yummo!! Karen C

I made them today too but I used the splenda brown sugar.   I second the Yummo!!   I was feeling guilty because Debbie G offered to make them for me because i hate to cook.   So I made Greg get the food processor out and he shredded the apples and the zucchini.   I am so impressed that I actually got it done!!   I also had 24 so my tins must be smaller.  

I actually think they are rich enough that the cupcake size is good. I'll do the brown sugar splenda next time. I've never cooked with it.  I have all kinds of gadgets that sit in the cupboards. I use my old fashioned cheese grater most of the time.  I had zucchini shredded in the freezer, carrots and apples in the fridge. I bought all of the other "specialty" stuff in bulk foods so I didn't have get a ton of it.  Definitely will make these again! Karen C

i use sugar twin brown sugar substitute-haven't tried the splenda brown yet and i cannot do regular brown sugar anymore.. if you take out the zucchini you might want to replace it with say dried apricots or something cuz you already have the apples in there-  and i have to think applesauce would make them runnyish...(sorry! you know what i mean! they aren;t meant to be "wet") --how about a fresh blueberry in there??? i didn't have raisins so i used craisins..and i used walnuts but almonds or pecans or hazelnits-or mac nuts!!ohhhh!!- would be good... i used my cheese grater for the apple and zucchini but used my little chopper  for the carrots-had baby carrots only and didn't wanna grate my fingers!!!

Good evening everyone. I decided to try posting at the other end of the day for a change. I am also worn out from yesterday.  I spent the morning first at a farmer's market. I got some nice flowers for my yeard. Then I worked in the yard remowing and trimming some. Around 1, N called. She was wanting some entertainment. I eventually went to get her around 3. We went to the flea marlet and then down to the Inner Harbor. I had stopped and purchased a sugar free cappachino something. Well, it was sugar full. By the time we got downtown, I was in misery. My stomach hurt so badly. I had to stop 3 times to dump. I hoped all the walking I was doing would help. I made it home and went to bed. I have felt so wiped out today. Not sure if it was the dumping or the 5 miles I must have walked. I don't know why all the handicapped accesses must be at the far end of things.  I have had a quiet day. I did cook a roast which will end up in the freezer. I planted the plants I bought. Luckily, I have a covered porch, because I had to do it under cover. Wehave had thunder storms and rain all day. I knew if I didn't plant them today, I may not have a chance later in the week. I hope everyone has had a great day. See ya in the am!

hi everyone!

Today Im about to go and sit outside on my new  verandah and eat my salad.  JB and Derek are gone to town to attend a CAR FLEA MARKET so Im all alone!!! woohoo!

Today Im staying home and doing more jean repair and crocheting and sorting thru old paperwork to purge. The sun has just disappeared and oh darn, they are already back so Iguess I will hear all about their great bargains *s*.

Yesterday I filled up my Buick at $1.17 a LITRE!! Theres four plus litres in a gallon. I visted Mother and she is in a  remarkabky good mood..and has been for weeks..Im waiting for the other shoe to drop. well Im off to the verandah while I can!
