Crustless Cream Cheese Pumpkin Pie
Ingredients
15 ounces pumpkin
4 oz. fat free cream cheese
12 ounces evaporated skim milk
3/4 cup Egg Beaters
1 cup Splenda granular
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. nutmeg
1/4 tsp. ground cloves
1/4 tsp. salt
31 grams (8 crackers/same as 2 full cracker sheets) low fat honey graham crackers
Directions
  1. Preheat oven to 400 degrees.
  2. Spray pie plate with nonstick cooking spray.
  3. Soften cream cheese by heating it in the microwave.
  4. Mix all ingredients until well blended, then pour into pie plate.
  5. Reduce oven temperature to 350 degrees. Bake for 10 minutes, then reduce heat to 300 degrees, and bake for 40 to 50 minutes. It's done when a knife inserted in center of pie comes out clean. 1/8 of pie = 101 calories, 1.4g fat, 14.3g carbs, 8.9g protein.

Linda....I am sorry you are dealing with allergies today. I have them also so I know how you feel. YUCK!!! I just now got computer service. The company I get service  from was down all day. It is 9:00PM and I am just now gettting on the boards...UGH!!!  You know how I need my daily fix of OFF!! No need to write down what I ate....catch up with you tomorrow...I hope! Ss sorry about your allergies. I must say that you really did inspire me. I made chow mein today.  However, when Marie was in China she didn't see anything like this.
