What are you eating/doing today? (Thursday)
Good morning everyone. I hate this cold weather. Went to the pool this morning just to warm my bones. I have put my heated throw under the sheet so that the mattress is warm throughout the night. This freezing nonsense has got to stop soon, my bones are frozen.

Over the holidays I made a faux ricotta cheesecake with Greek Yogurt, ricotta, and SF pudding. I have the puddings in white chocolate, cheesecake, lemon, chocolate, butterscotch and pistachio flavours, so I will be making more of this. A nice source of protein and calcium, and it's easy to make ahead of time and just have in the fridge when you're hungry.

I mixed half Greek Yogurt (half a large container) with half ricotta (half of a large container, not the light stuff) and 1 packet of SF pudding. The SKYR yogurt and the full fat ricotta are quite thick to begin with. If you are looking for sugar free Jello pudding, the ones that say fat free are also sugar free in Canada I think. It's usually in a different sized box. I get my pudding from the Low Carb Grocery or when I go to the States and do some cross border shopping. It's all Jello brand, but LCG and the States have better flavours. Sometimes I'll put toasted pecans on top, or add in some chia seeds for fibre.
