Curry recipe ( altered from loony spoons ) for puréed diet

so I make this all the time. But I thought it would be great puréed in fact it was excellent

the original is is from the book loonyspoons and it's a curried affair.

My version is

3breasts cooked chopped chicken breast

2cans Campbell cream of mushroom soup undiluted

1/2 can pineapple tidbits drained rinsed

mushrooms 2pkgs

onion

1pkg matchstick carrots

1tblspoon curry powder

1tsp cumin

1tsp chillies

salt andpepper to taste

sautéed chicken with a spray ( Pam) add half spices, remove chicken from pan add veggies Pam and half spices sautee until very soft but not carmalized add soup stir add pineapple boil

cook for 2hours on low cool and purée

Portions for normal people are one cup per portion

i did a half cup could very happily done a quarter

overindulged but it was so tasty

please feel free free to adjust spices I like it fairly spicy but take it to your level.

Sounds good, I think I'll give it a try in a few weeks. How do you think it would be without pineapple though? Should I substitute it with something else or should I be able to omit it completely?

i find that the pineapple is a great element of sweetness. it really gives depth to the dish, but i would assume that you could sub something in. i dont know how well a pkg of sweetener would work but you could try. i know someone who did it with raisins but i think that would be hard on the pouch.

i think you only need one or two tidbits per serving to get the flavour if you want to add the pinapple just when you finish and only add one or two per blending that may work

Good points, thanks. Very picky eaters who won't even look at pineapple at my house so adding them at the blending process would probably work best.
