I do the same thing, although I've gotten into a food rut lately.

The most fun I had was making zucchini noodles. I bought a spiralizer with different cutting plates that make various sizes and shapes of noodles and it's fun to use. Tasty too, lol.

I also bought a dehydrator and made yummy beef jerky, crispy zucchini chips, and kale chips.

I was told there is a lot of great ideas for us on pinterest. Just type in recipes for gastric bypass, hope this will help and get you out of your rut hun! I will definitely look into buying spiralizer that sounds like fun. The one thing that I think helps is making your meal look fun and exciting. For me I am a big time visual eater, the more colour and texture the more I want to try it. I also love flavouring with Jerk, cajun and so on. One year I made Jerk turkey with fresh mango, pineapple, red onion and sweet pepper salsa for thanks giving omg it was sooooooo good! I have made cajun salmon with fresh lemon and I have also used jerk on my salmon, you can use the salsa with the salmon or white fish as well. The spice aisle is our friend to change things up.
