What are you eating/doing Thursday?

I've been all over the place, and still working on getting back here regularly. Hoping it will keep me accountable!

I've had a huge cheese craving lately so... there's a bunch in my day today.

B - cheese (I forgot to weigh/measure), ham deli meat, and I allowed myself 6 crackers to go with it.

L Ham deli meat wrapped around cheese, probably about 1.5oz of cheese and not quite 2 slices. The slices in this package are either really thick or get so thin they end about hal way through the slice.

D - early as I'm going out in a bit. I made a bit of a take on sesame chicken... 1 small chicken breast cut up, seasoned with garlic and pepper, and about 1/2 -2/3 of a tablespoon of flour for coating. For the sauce I combined roughly just under a tablespoon of sesame oil with a little less soy sauce (will have to pick up low sodium if I'm going to make this more) and just the tip of a teaspoon of honey and about 1/4 cup of water. I also added 14 snap peas. cooked everything and took it out of the pan added the sauce and threw it all back in to get coated and thickened. it was pretty good.. strong so next time I'll use less oil/soy and more water unless I'm making a bigger batch for leftovers :) I'm also going to try Stevia to cut the sugar. and cornstarch or another coating for the chicken... research will be done.

S - Iced coffee (I know caffeine, No sugar, added stevia)

S - I'll be taking a protein shake with me this evening to avoid any possible snacks my friend tends to have out at these things. Lol. Protein shake will include : half a banana, roughly 3/4 tablespoon of pb (i just scoop a little in to thicken it and i have to use it up) about a table spoon pb2. again for thickening and flavour, and a little cocoa powder, i don't measure but it's roughly 1/4-1/2 of a tablespoon.

I'm also puttering away little bits on the house, trying to figure out what to do for my grandma's birthday next week now that she's in a home and not doing so well. What would brighten her day - even if she won't remember it. Also, homework if I can get some time for it!
I've been lazy will all the stuff going on in y world right now and hoping to get back to at least some walks and slowly build up to some good exercising. Need to lose those pesky 10 - 15lbs of regain!

Your sesame chicken sounds delish; thanks for sharing the recipe.

It was. I would recommend either uping the water and whatever it's going over... or cutting the oil and soya down a bit. It was fantastic but strongly flavoured. It was a last minute thought I'd already had garlic and pepper on the chicken. Lol.

So good I may make it again tomorrow! Lol.

I'm always looking for new ways to make chicken, so may give it a try myself next time I have some. I had my first chicken cutlet today, with next to no breadcrumbs on it. It was still yummy, lol, and didn't up the carbs too much.
