You are doing great. 6K is very impressive.

Go slow with the raw veg. I think I was 3 months out before I was allowed raw veg. Those are things to try the first time at home to be on the safe side. Everyone is different, but one of the first times I had issues was eating green peppers. Now I eat peppers almost every day in my salad, lol.

I'm definitely feeling that last Km, not so much sore as I am exhausted. I want to be able to walk the 10k on my own before walking it in 7 weeks. I've managed to get a couple hundred dollars in sponsors so it gives me that umph to push myself!

I had done cucumbers yesterday and was nervous, but they aren't as crunchy as carrots. I chewed and chewed the carrots until I couldn't chew them any more, they seemed to have sat well. The dietician made a comment that I should be eating regular foods and not so much soft foods, I don't see it makes a difference as long as I'm getting in my protein, I am ok with adding in veggies and fruit as tolerated but I have no intention on eating pasta, rice or bread and she said I should be having small amounts of these things.

You are very wise. Many have stalled when they started adding those types of carbs into their menu. For me those types of carbs trigger cravings, so I tend to stay away from them.

Never heard of Bolthouse Avacado/cilantro dressing, but it sounds delicious. Where can I find it?

I buy it at Sobeys. It's in the refrigerator case in the produce section with the Renee's dressing.
