Thank you, and it does help that she had a good life and I do feel lucky to have known her.  Glad your cat is, ok, I'm sure he likes getting spoiled.  My remaining dog is getting all my attention now and I am sure he likes that too!  Your menu looks great, how do you makes the ricotta bake?

Thank you. Yes Mr. Blue is definitely enjoying the extra attention, I do hope he doesn't start faking later on like children do lol

Here's the Ricotta Bake I got it from theworldaccordingtoeggface site, it is absolutely delicious very close to lasagne taste.

8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce (I like to make the sauce with crushed tomatoes and salsa give a nice tangy taste)
1/2 cup shredded Mozzarella Cheese

Mix ricotta cheese, Parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes

Zizzler I'm so sorry for your loss.  She was a real cutie and so gentle.  Today I was at a funeral.  The one thing we all took away from the day was to try to enjoy life to the fullest because nothing is guaranteed.  Sending hugs.

My dog is my life and my angel.  She got me through some terrible dark times a few years back.  They are a true blessing, but like us ....all need to go at some point.  It did sound like it was time.  Sorry for your loss.
