thanks for the advice.  I didn't realize they cooked faster when brined.  that also means I don't have to rush as much when I get home from golfing.  Now I can take a little time .  Do you remember how much time was shaved off the cooking?  I usually figure 4 hours for an 18 pounder at 325...give or take a bit depending on the oven ( some really run hot eh?)

You did a wet brine right with sugar, sal****er, spices, etc?  Some people dry brine and that doesn't change the cooking time but wet brine does.  We usually do about a 16 lb turkey in 2.5 hours when brined and that's stuffed.  Not sure if you do yours inside the bird or out.  We always allow the normal time per pound and then just let it rest until dinner time as it stays so juicy.  Not sure if you are following a recipe or not but if you did the wet one that uses a lot of salt and sugar, make sure you rinse it well.  We also normally brine ours 3 days.

Just finished doing the brine and yes its salt, sugar and spices.  Just waiting for the mixture to cool so I can put it together with the ice water and the turkey.

 

I will rinse very well as you know I really don't like the taste of too much salt.  Also stuffing the bird - I am a traditionalist with sage and onion.  OK will watch it carefully tomorrow - sounds like maybe 3.5 will work fine

Good morning everyone. Work today and hopefully swimming. Home tonight. The power cord to my less than one year old computer died last night. Considering I never move the cord but leave it in the same room and place it should have lasted forever. I need to look into the warranty. Until I replace the cord I will not be on the computer much at home. We do have a desktop but it is usually used by my DH.

Afternoon all. Just got back from school and did more xmas shopping, boy do i love shopping. Finished my sociology paper yesterday with two days to spare, now i move onto the next project, whatever that is, lol. Have a safe fun trip Monica and try to send us some warmth too. CC, hope you kick that crappy cold soon. The one thing i like after WLS, i barely get colds now. I must have a good immune system now with all the vits. I was forced to reschedule my 2yr appt at Guelph today as i wouldn't have made it there from Simcoe on time. I will definitely go next month when i'm on break.

2yrs post-op

B - 3.5oz salmon, 1/3 cup cucumbers

L - 3oz chicken breast, 1 cup iceberg salad

S - didn't finish lunch so will eat that, 1 cup silk almond

D - home made ground chicken burger, 100 cal dinner roll, salad

S - rest of dinner, 1/2 cup milk

641 cals, 30 carbs, 28 fat, 80 protein, still a bit low so will add some cheese
