Hi Zizzler, I too love your recipe for these crepes! So easy and tasty! I have passed your recipe on to a few friends and they rave about them  

I am going to try the quesadilla and greek yogurt! Can't wait!!!!

Rosemary and garlic sounds like an awesome combo Tanya, let us know how it turns out if you try it.

I keep saying I am going to try different herbs but I have yet to try even one, always make them plain. lol

I have made them with just nsa jam for a morning crepe. Also have had it with ricotta cheese and a bit of fruit, ham and swiss cheese (almost as good as they serve at Cora's restaurant/pre surgery of course), and once tried it with warm turkey and gravy.  I love how versatile they are and how great they keep in the fridge.  I no longer buy tortillas/flat out bread, which I usually ended up wasting anyway.  I have only tried adding cinnamon so far.  The possibilities are endless.  I also love the benefits that the psyillium husks provide.  :)

I hear you about the psyllium, it really keeps things moving doesn't it? 

Did the cinnamon one turn out well?  Was the turkey and gravy one good?  Ham and swiss sounds awesome!  I made bean burritos out of them once and that was really nice too.  The website where I got the recipe suggests using it as a wrap for other sandwich fixings like tuna and coldcuts, I have yet to try that.

Yes, they have all turned out well.  The turkey one was sort of like a hot turkey sandwich with gravy...the ham and cheese was awesome.  Cooked the wrap first, added a thin slice of ham, topped with cheese, folded it over and let it all warm and melt together.  yummy.  I have been meaning to try it as a wrap for lunch meat, but I always end up doing something else or just plain with nsa jam.

KarenM posted a recipe awhile ago for brie and pears on flatbread(?) or foldout bread or something..i think that would be a wicked combo.
