Surgery March 23/2011. Completed three full marathons and two half marathons, two half Ironman distances. Completed my first Full Ironman distance (4 km swim, 180 km bike, 42.2 km (full marathon) run) in Muskoka August 30/2015. Next Ironman Lake Placid July 23/2017!

Morning Karen and everyone. Karen, I'd love to know how the pancakes turned out.

I'm still headachey today. Weird. I think I must be fighting something off. Which I guess is better than a full-blown cold, flu, or other illness. But still, it makes it hard to concentrate on work. I have a lot of research to do today, which means lots of reading, and that kind of sucks when you have a headache.  It's a low-grade one so not bad enough to stay home sick, but just enough to make it hard to get anything done.

Okay, whining over. Rode my bike to work today for the first time in over a week. Wasn't able to ride it in last week due to a combination of thunderstorms on some days and errands I had to run with the car on other days. So it was nice to ride in today, especially with the temperature being a bit cooler. I thought the fresh air might help the headache, but it didn't, really. But still, it felt good to ride.

1 YEAR, 8 MONTHS POST-RNY

B - 1 fried egg (I don't think my hubby used oil, I usually do) on 1 slice of toasted P28 bread

S - 1/2 cup ricotta/vanilla/xylosweet mix with 1/2 cup berries. And I also brought some cherries to graze on throughout the day.

L - Found a serving of homemade meat lasagna in the freezer from quite a while ago - hope it's still good, because that's what I grabbed!

S - Yin Yang Soyfood tofu snack

D - I took chicken out so I'll probably curry it somehow and make some Jamaican rice and peas to go with it, along with a side of steamed snap peas from the farmer's market. I'm going to try freezing half the recipe of rice and peas because every time I make it, I can't fini**** before it goes bad in the fridge over the next few days. And unfortunately it's not easy to halve the recipe since it calls for a can of kidney beans, a can of coconut milk, etc.

S - Not sure. Something light if I need it.

I haven't tried Agave yet. I would like to try something more natural than sugar-free products. I'll give it a whirl sometime when i'm not going out (read: so I'm not on the floor in the bathroom a half an hour later dying! )

Really yummy, I liked them and I will definitely make them again!

Agave is VERY sweet - I use it very sparingly, like I would do with super-sweet honey.

I had agave a lot before surgery...just wasn't sure how I would react to it. But really, I have real sugar sometimes...and I sometimes react, other times I don't. I just haven't really thought about agave in years. :-)

I'm trying to avoid artificial sweeteners where I can these days. My liver specialist yelled at me when I was in the hospital last year (one of many, many months and weeks I was there) - "YOU LISTEN TO ME, KAREN! You're gonna eat sugar and you're gonna LIKE it, dammit!"

I'm doing as I'm told - I avoid the fake and eat real. I still avoid refined sugar like the plague though. "YOU'RE NOT THE BOSS OF ME!"

Does he include Stevia in that artificial mix? I"m guessing yes.
