Mock Rice Pudding

Nice and cool - and quick to make.
1 pkg instant sf vanilla pudding mix
1.75 c milk - skim, 1%, whatever you like
1 c 2% cottage cheese
1 c lite Cool Whip
.25 cup raisins - optional **correct to add the 'cup' ***
cinnamon
Blend milk and pudding in a bowl until thick. Stir in the cottage cheese and cool whip (refrigerator soft, not directly from freezer) and raisins and stir until all well mixed. Sprinkle some cinnamon on top. Enjoy.

Just checking, but I'm assuming that you meant 1/4 cup of raisins, rather than a quarter of a raisin?

Could have been a 1/4 of a package or box as well. I've taught students, and have learnt at my peril the importance of being precise :) If there's any possible way to misinterpret instructions, I've had someone do it.

I guess you could use either then, but if you were looking to add protein - go for the cottage cheese. Would be good for soft food diet, without the raisins......and use the cauliflower if you were looking to add veggies, or just not to add any extra calories........the cottage cheese adds a lot of texture as it is. See...? always options!!!
