phase 2 diet recipe share (full fluids)
I spoke with the dietitian in the hospital before I left and she said as long as I use a pasta sauce with a low sugar value it would be great!
They suggest that we eat cottage cheese and ricotta cheese as part of our milk and milk alternatives and I thought....hey that's the best part of a lasagna (not a fan of either cheese raw/cold).....
So I'm not sure what to call it but it's good!
Recipe
- 2 tubs of low fat ricotta cheese
- 1 tub of no fat cottage cheese
- Your choice of pasta sauce (low calorie and low sugar)
(I used Monte Bene, from health food store only 45 calorie for 1/2 cup serving and 1g sugar for 1/2 cup serving)
- Mix in med bowl add seasoning to taste ie Italian seasoning, garlic, S & P etc.
- In 9 in square pan lay a thick layer of the cheese mixture in the base of the pan.
- Top with thin layer of pasta sauce
- Repeat second layer of cheese and sauce (thin layers)
- Cover with foil and bake at 350 F for 35 mins
I portioned the completed baked mixture in to 1/4 cup portions and got approximately 11 portions.
Makes a great dinner item!!
For all that are on or going to be in phase 2 and need a change ENJOY!!

Sounds yummy, you could even add shirataki noodles boiling them first to get rid of the packaging smell. If you are concerned about sauce you can make your own using 1 bottle of strained tomatoes, onion, garlic and fresh basil add half a bottle of water and bring to a boil, add salt as needed and reduce heat, it will thicken as it cooks. No sugar and you control the salt. I use it for my meatball recipe and put them in the sauce to cook, it is so delish.
After 2 weeks of opti... 1 week of clear fluids by the time I got to my 3rd week of full fluids I was so meat crazed I blendered a can of chucky chicken soup.
It was like drinking gravy... It fixed my 'meat madness' but I don't recommend it. It was not one of my finer moments.
