I was told this is high in fiber and good for you....

If you eat it, can you give me some ideas on what to do with it?

I haven't used it a lot, I like it but my spouse isn't wild about it, but I have made this dish.  Even my wife liked it!   www.runningtothekitchen.com/2012/04/bulgar-wheat-salad-with- orange-dijon-dressing/

Bulgar I`ve had, it tastes like something Bulgarians would like. (ohhh I`m going to get mail!). I mean, it is a strong tasting grain, I think of it as good for ducks.

I don't usually, actually.  But have you tried quinoa?  It is AWESOME. Totally high in fibre and protein.

I second quinoa. It's one of my favorites.

I make an awesome quinoa salad. I haven't looked at too closely from a post op standpoint, but I suspect it'll be fine on my sleeve in moderation.

Quinoa Salad

2-3 cups cooked & cooled quinoa
2-3 diced tomatoes
4-5 chopped green onions
3 stalks chopped celery
1 bunch cilantro chopped
juice from 1-2 limes
1/4 c olive oil
sea salt to taste

That sounds delish!  Check out the ON recipe forum - there are quite a few REALLY good ones there too!

I eat it as a side dish instead of rice or potatoes.
I interchange any quinoa recipe with bulgar wheat.  sometimes I want a different texture and switch between quinoa or bulger.

make any of the quinoa recipes and replace the quinoa with bulger.

I am not a recipe girl, so I just mix in stuff that I like to eat with flavors that I like.
