Easy But Impressive Egg Roll-Ups

Here's a recipe I found that people might like.

Prep Time: 25 minutes | Makes: 4 servings

2 plum tomatoes, seeded and diced
¼ cup (50 mL) chopped fresh basil
1 tbsp (15 mL) olive oil
1 tsp (5 mL) balsamic vinegar
¼ tsp (1 mL) pepper
1 carton (500 g) Egg Creations™
Cheese & Chives, well shaken
8 slices, part-skim Mozzarella cheese
8 slices, cooked ham


1. Toss the tomatoes with the basil, olive oil, balsamic
vinegar and pepper. Reserve.
2. Spray a small non-stick skillet with cooking spray; set
over medium heat. Pour ¼ cup (50 mL) of the Egg Creations
into the skillet, swirling to coat evenly. Cover and cook,
without turning, for 1 to 2 minutes or until set.
3. Loosen edges with a spatula and slide onto a plate. Centre
a piece of cheese and a piece of ham on the omelet. When
the omelet is just cool enough to handle, roll into a log.
Repeat with remaining ingredients to make 8 roll-ups. Serve
the roll-ups with the tomato basil relish.

that sounds awesome!!! can't wait until i can try this recipe out!!! it will be a bit...seeing as i just had surgery aug 19th :)
