Good morning and Happy Father's Day to all the Dad's out there!

I was surprised to see that no one had posted this today yet!  Survived a very large graduation/birthday party yesterday with 40 people (mn was that  a lot of work!) and then followed it up with a Father's Day party afterwards for my best friend's family (thank goodness I did not have to do the food/planning for that as well!).  Today I am off to do my own Father's Day celebrating out at my grandparents...should be a great family day like usual and I only have to take one dish of food!  Yay!!!

B - Tilapia and squash
S - Olives and coleslaw
L - Pulled pork with no bun and various salads etc at Father's Day gathering
S - strawberries
D - same as lunch
S - cold meat sammich

Lots and lots of water!  I never have a problem getting my water in....especially in this warm weather I think I drink twice as much as the daily requirement at least!!!

Have a great day and enjoy your dads and this gorgeous weather!!!

Heyy Karen :)
How do you make the tostadas??? I used to used corn tortillas but I have made them since surgery and I am REEEAALLLLY craving a chicken tostada :) ( I used to make them with carrots, potatotes, chicken, lettuce, and hot sauce and a little mayo.. on top of the tortilla)

They're store-bought. lol  Charras brand corn tostadas, in the Mexican section.  I eat one at 63 calories, 8 carbs.  Then I load "stuff" on top of them - sometimes cold, sometimes I bake for something melty. :)  I love the crunch!

Mmmmmm!  Yay!  Glad you did the tostadas K!!!  I was so hungry I got up and made one in the middle of the night.  I put olive and roasted red pepper and chickpea hummus on it and then topped it with green stuffed olives and cheese and heated it up in the microwave til the cheese melted.  It was soooo tasty!  I often use refried beans on it then lots of whatever veg is around and then shredded cheese.  Soooo tasty!  I LOVE TOSTADAS!!!  Yours sounds yummy too!!!
