Making eating our protein easier...
Thanks for the great ideas ladies =) So far all I've done is buy up a lot of fresh salmon, tilapia, boneless chicken breasts. I spent Friday cutting them up, weighing them in 2oz portions and wrapping and freezing them. They are so small they'll dethaw quickly if my parents plan something for dinner that I can't/won't have or go out for dinner. They fry up superfast too!
I'm going to try some slowcooker ideas, Barb or Laurie do you have a link for the chicken fajita recipe? =) And I'm going to try your salad recipe soon Barb as I'm tolerating everything beautifully!

Laurie R's Chicken Fajita recipe
In a crockpot
1/2 box of low sodium chicken broth
1 pkg of chicen fajita seasoning mix
5 frozen chicken breasts
1/2 bottle or more of salsa
Stir the seasoning mix in with the broth - add chicken breats and pour salsa on top
Cover and cook on low for 8 hours
When done - the chicken will pull apart and shred very easily. I use a slotted spoon and immediately put in small containers and then add shredded cheese on top. Very easy to pull out when needed
If I have it around, I also put some extra tomatoes or salsa on top and sour creme

I have two things i do to make getting protein easier.
Sundays I slice several different kinds of cheeses and put them in Tupperware in the fridge then it's easy to grab some and go. I also always have cheese strings on hand.
Every weekend I cook 20 to 30 chicken wings and then put them in the fridge, I can grab a couple and eat them quickly. I have yet to make it through a week and have "extra" chicken wings!

piller's turkey bites! like lil pepperettes. they sell them at costco. each has 6gm of protein, they're a bit spicy and i eat a couple a day as snacks.
roasted edamame and salt and vinegar almonds from `costco. i keep both in my purse.
