Hi All! It is cloudy and the weather is gradually getting cooler. Fall is upon us. One of my favorite things to do on a cold day is have a bowl of soup for dinner. What is your favorite kind of soup? (if you have the recipe, please share). ~~Jaimee Tomato and sausage soup. 1 lb turkey sausage (browned and crumbled) 2 bunches of kale 1 can of tomato sauce canned diced tomatoes (or fresh about 2 large beefsteaks seeded) 6 small red potatoes (cut into discs, peel on) 1 can of evaporated milk sm white diced onion 1 garlic clove, minced or pressed 1 Large family size can of Chicken broth 1 T oregano or italian spices Coarse ground black pepper and salt to taste bring the broth to a boil, add kale (coarsely chopped)add potatoes, tomato sauce, spices, lower heat and add canned milk. Coo****il the potato is fork tender and serve. Note, make sure you don't boil it after you add the milk

This is a yummy one... White chicken chili 3 can great northern beans 3 or 4 chicken breast... cooked and cubed peppers... yellow.. red.. green.. whichever... or all 3...diced up... about 3/4 cup total. 1 small onion diced 2 cloved garlic 3 and 1/2 cups chicken broth 2 teaspoons of cumin * i use less then this 1 teaspoon of oregano salt This can be thrown all into crockpot. Very good... just had some last night !!!! To do this up right.. lol... after you serve it, add mozzerlla cheese, sour cream and nacho chips. ENJOY !!! Cindy

LOL. That's okay. I have a really good potato soup recipe I learned when I worked in a hospital. The chef who taught it to me was a phenomenal cook! I add dill, green onions, bacon and sour cream to it.

Okay, I found it here it is: (this is guestimating because I do it out of my head, I don't actually have it written down) white sauce 1/2 C. BACON GREASE (Strained to remove any browned particles, warmed) 1/8 cup flour 1 pint Half and Half [warm bacon grease, add flour, cook in bottom of pan until you have a paste and gradually add half and half until you have a thick white sauce] ------ add SLOWLY and whisk in in this order ( if you add broth too fast it will be lumpy whisk it constantly as you add it) 1 large can of chicken broth 10 -1/2 OZ CAN CREAM OF CHICKEN SOUP 1 CUP CHARDONNAY (Optional) 1 pint SOUR CREAM (Room temperature) ------ use 1/4 CUP EXTRA VIRGIN OLIVE OIL and baste 8 MED RUSSETT POTATOES bake them until they are done scrape them out into liquid mixture ------ add 2 cups instant potatoes 2 MEDIUM ONIONS (diced and carmelized in a pan with 2 T olive oil) 1 cup bacon bits coarsely chopped 1/2 LB MOZZARELLA CHEESE (Grated)) 2 TSP GRANULATED GARLIC 2 TSP WHITE PEPPER 1 TSP SALT or to taste 1 tsp dill Garnish Toppings ( right before you serve) put some of the following on top . The amounts listed should be enough to use with the 1 1/2 gallons of soup this recipe makes 1/2 LB SHARP CHEDDAR CHEESE (Grated) sour cream for dollops on top 1 BUNCH SHALLOTS (Chopped) 1/2 CUP BACON BITS (Crumbled) Serves 8-10 dinner sized portions (pre-op size) not low carb or low cal, but Yummy! Jaimee, My favorite was my mom's German Chicken and Dumplings. It is my kids' favorite too. 1 whole chicken boiled and removed from the bone.(save the broth) 2 cloves garlic 1 onion diced 4 or 5 carrots cut into pieces 2 or 3 potatoes pealed and chunked 1 lg can of chicken broth salt and pepper to taste The dumplings are what make it German I guess. You mix 2 eggs and then add flour to make a dough. Then you drop spoonfuls into the boiling soup. Continue to cook for 10 more minutes. Yummy but the dumplings are bad for us post ops. I can't wait to try your soup. Great question.
