VERY affordable/VERY yummy Egg Rolls!!!! Pics!
We had the BEST dinner last night! Even my pickyish husband loved it! We've been in a bit of a rut, with me making the same darn dinners over and over, LOL
So I stole this recipe from my friend, when I visited her recently in Georgia. She and her hubby do Weigh****chers, so this is either a WW recipe, or from Hungry Girl, I forget which. =)
Anyway, without further ado...here ya go.. =)

Ok, so...I used Ham and Turkey and Cheddar, but you could do any combo you like--Ham and Swiss, Turkey and Cheddar, mixed, whatever... =)
Oh, and...this was verrrrrrry affordable!!!
Ingredients:
Egg Roll wrappers--$2.50 for 21 wrappers
--they come refrigerated-- found them at Stop&Shop in the Veggie section, with the Asian-i****ems.
Sliced Cooked Ham-- on sale 2 for $4
--(Like lunch meat, but not too thin) I bought store brand, pre-packaged near the dairy stuff.
Sliced Turkey--on sale 2 for $4
--(Same as the ham)
Cheddar or Swiss slices--$3
(or whatever cheese you like, but a dryer cheese works better than American)
Scallions--69 cents for a bunch
(Just over $10 for dinner for 4, plus enough for a whole second dinner!So, really under $6 per meal!)
-Spray your cookie sheet with cooking spray--generously.
-Slice the ham, turkey, and cheese into bite size pieces, about the size of a postage stamp.
-Slice the scallions--maybe 3-4 scallions--however many you'd like...
-Mix the meat, cheese and scallions together evenly.
-Take one egg roll wrapper, with it placed like a diamond (corners at North, South, East and West) and place a lump of the filling in the middle.
-Fold in the side corners.
-Use a little warm water to wet the edges of the bottom corner. Fold it up to meet the already folded sides.
-Wet the edges of the top corner and fold it down. They will look more flat, like an envelope than a round egg roll.
-Make sure all edges are sealed so no filling sqeezes out.
-Complete all egg rolls and spray the tops with cooking spray.
-Bake at 350 for about 15-20 min, turning half way through.
They come out crsipy and yummy! Serve with veggies and whatever dipping sauce you'd like--Iused Low-Sugar ketchup. =)
**2 of my brand of wrappers is about 22 carbs, so I stick with 2 egg rolls plus veggies and it was verrrry filling. =)
**I didn't add amounts of the meat and cheese because it depends on what you like.
For 12 egg rolls, I used 8 slices of cheese and 8 slices of ham and 4 or 5 of turkey.
And, I used 4 scallions. I had a little filling left over...

That's looks good. Good thing I'm not hungry and the nearest store is 15 miles away or I'd be running right out to get the stuff to make them. This also gives ideas for other filling ideas. Gotta get my imagination going on this. Thanks for sharing!
