Vegetables and the soft food diet

How did you get in vegetables when just getting in protein in the soft food phase was difficult? Or did you wait until the regular food phase to eat them?

Just eating protein has always filled me up so much I've had a hard time adding in veggies. I'm trying really hard to keep my carbs low, and at 4.5 months out I'm still only able to manage 4 oz (1/2 cup) of solid protein at a time unless it's something soupy or saucy, so no room for veg.

As much as I love my veggies (former carboholic to the Nth degree!), I resigned myself to the fact that I'll have to wait until maintenance when I can up my calories and carbs a little before I can really add in veggies on a regular basis.

Others seem to be able to do it this early on, but I'm focused on reaching my goal, and then will make changes at that time.

I have been mixing vegetables with my protein. For instance, I blend cucumber and celery with Greek yogurt and then mix in smoked salmon. Or I have soup with cooked vegetables. On Friday, I made a Shepherd's Pie with a topping made out of cauliflower and ricotta instead of potatoes.

hi, I'm just 10 days out of surgery so I know it will be a while before I can eat that , but could you post the recipe for that Shepard pie, I love Shepard pie, so I'm sure this is gonna be fantastic . Thank you.

I used Ricotta instead of the sour cream, and it was more like 1/4 cup instead of 2 tablespoons. I also added an egg to the topping, which made for a nice consistency...and more protein! I diced the carrots, onions, and celery (i also added celery) super fine before sauteing.

I made soups using can broach, fine diced veggies and meat. I could only eat 3-4 oz so I added a 1/2 scoop to unflavored protein to each serving. Mix the powder with water (or milk) then stir it into the (not too hot) soup.

I used Unjury, it has 10 grams protein in 1/2 scoop.

For me I just do one thing when collect the vegetables from grocery shop. I just clean them well before preparing for cooking. So that I can get protein from it.
