Vegetables and the soft food diet
Just eating protein has always filled me up so much I've had a hard time adding in veggies. I'm trying really hard to keep my carbs low, and at 4.5 months out I'm still only able to manage 4 oz (1/2 cup) of solid protein at a time unless it's something soupy or saucy, so no room for veg.
As much as I love my veggies (former carboholic to the Nth degree!), I resigned myself to the fact that I'll have to wait until maintenance when I can up my calories and carbs a little before I can really add in veggies on a regular basis.
Others seem to be able to do it this early on, but I'm focused on reaching my goal, and then will make changes at that time.

I have been mixing vegetables with my protein. For instance, I blend cucumber and celery with Greek yogurt and then mix in smoked salmon. Or I have soup with cooked vegetables. On Friday, I made a Shepherd's Pie with a topping made out of cauliflower and ricotta instead of potatoes.
hi, I'm just 10 days out of surgery so I know it will be a while before I can eat that , but could you post the recipe for that Shepard pie, I love Shepard pie, so I'm sure this is gonna be fantastic . Thank you.

I used Ricotta instead of the sour cream, and it was more like 1/4 cup instead of 2 tablespoons. I also added an egg to the topping, which made for a nice consistency...and more protein! I diced the carrots, onions, and celery (i also added celery) super fine before sauteing.
