Wedding Cake - Post Op RNY

I am getting married in a few months and I would like to have a traditional cake cutting at my ceremony.  I do have dumping syndrome so I want to keep the cake low sugar, but also be something that my fiance will actually enjoy and stay away from sugar alcohols if possible.  

Any ideas?  Anyone know a bakery that could help in the Atlanta area?

Just a thought but could you ask the baker to use Splenda instead?
