XPost -- Sounds Yummy & Protein-Packed---Thought I'd share

I know I'd use greek yogurt instead....not sure what to sub for the honey.....any ideas?  I really like the idea of 34g of protein.  I would probably use half of a sandwich thin....or maybe half of a slice of the Julian Bakery bread which would up the protein total as well.....any ideas for other tweaks?

Creamy Chicken Salad with Yogurt and Apples (source listed below)



Serves 4 to 6

Prepare this salad ahead of time and serve chilled, if you like. Spoon into avocado halves and serve with whole wheat crackers for a refreshing lunch or dinner.

Ingredients

1 cup low-fat cottage cheese
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
2 tablespoons nonfat plain yogurt
2 tablespoons nonfat milk
Salt and pepper to taste
1 pound cooked skinless, boneless chicken breast, chopped
3/4 cup finely chopped celery
2 green onions, thinly sliced
1 granny smith apple, cored, peeled and chopped

Method

Put cottage cheese, lemon juice, mustard, honey, yogurt, milk, salt and pepper into the blender and purée until smooth; set aside.

Put chicken, celery, onions and apples into a large bowl. Pour over cottage cheese mixture and stir gently to coat. Serve immediately or cover and chill until ready to serve.

Per serving (about 7oz/204g-wt.): 210 calories (35 from fat), 4g total fat, 1.5g saturated fat, 80mg cholesterol, 510mg sodium, 9g total carbohydrate (1g dietary fiber, 7g sugar), 34g protein

It's only a teaspoon of honey.  Unless you think it would make you dump, I'd leave it.  Honey has beneficial properties.  But if you really want it out, maybe you could swap in your sweetener of choice.  Is agave nectar an option?
