tonight's dinner.. vegetarian

So I felt creative when shopping this morning, so I threw together my own new version of stuffed bell-peppers- and vegetarian to boot!!! Here's the stats:
1/2 pepper:

215 calories
35 carbs (all healthy ones)
10 grams fiber (wow!!)
18 grams protein (yeah)
5 grams fat

I warmed up 2 oz of crumbled tofu fake ground beef (packaged like ground cooked beef). I sauteed 1/2 cup of southwest veggies (corn, peppers, onions and kidney beans) with 1/2 cup rotelle tomatoes and chili peppers,  and I cooked yellow and green lentils (only used 1/8 cup dry). I mixed the meat stuff, the lentils, the veggies and 1//4 cup canned sloppy joe sauce and stuffed in the half's that I boiled for about 10 minutes. I topped with 1/4 oz colby jack cheese each and baked for about 10 mintues.

after warming up!!!! Can't wait to dive in!!!

Goal weight reached ~ without malabsorption!!! Yipee.....

have you tried Quorn crumbles yet?  they're delish!  I find them to taste more like ground beef than morning star farms.  they have great products even a "turkey roll" some vegetarians said they used at thanksgiving last year and don't feel deprived anymore :)
