Alcohol in cooking

We go to a Greek restaurant and one of our favorite dishes is Saganaki, flaming cheese. They broil the cheese, put it on a sizzling platter, bring it to the table, pour Brandy over and light it on fire and put it out with lemon juice.

So, doesw this sound like something we can have? is there too much sugar from the alcohol or is it burned away?

The alcohol may be burned away but the sugar will still be there.  A bite or two won't hurt you, but overall cheese and sugar are not our best food choices.
