YUMMY Recipe: Tomi's Smoke-A-Dilly Salmon

Tomi’s  Smoke-A-Dilly Salmon

Ok folks! This is so yummy if you like smoked salmon and very versatile so I’ve included a couple of options on using it! It tastes soooooo GOOD!! You can use it like a salad, as a dip, as a spread for cucumber sandwiches…and the possibilities… wellllll, they aren’t endless but use your creativity, lol!

 

½ lb.                       Smoked Salmon

8 oz                        light or fat free cream cheese

2 Tbsp                   Smart Balance Mayo

2 Tbsp                   Tillamook Fat Free Sour Cream  (this brand is so yummy it tastes like the real thing!)

1-2 Tbsp                               Fresh Horseradish – creamed, use to your tastes, it just makes it zippy!

1                              Large Lemon – the juice and zest the rind

1 tsp                      Dill  ( I like to use the fresh dill you can buy in a tube in the produce dept)

1                              small bunch of green onions/chives,  finely chopped

A few shakes of Louisiana Hot Sauce or tobacco – can be omitted, but tastes so good, not spicy!*

A couple grinds of pepper

A pinch of ground sea salt or reg – can be omitted*

A pinch of paprika

Option 1:

 

Flake the salmon, set aside. In food processor/blender add remaining ingredients and blend well. Mix the salmon with the spread and Viola! Like Tuna fish salad but better…with salmon, and zippy!

Option 2:

 

Throw it all in the food processor and it’s a zippy smoked salmon dip!

***FOR THE REST OF THE OPTIONS: Fix either option 1 or 2, DEPENDING ON YOUR PREFERENCES***

 

Even More Options:

 

1.       Serve with sliced English cucumbers as chips, or use the spread to make GREAT cucumber sandwiches with some sour rye bread. My kids LOVE those!

2.       Mix a dollop or two with some eggs or egg whites, put in a custard cup and nuke it in the microwave for a quick breakfast mini casserole!

3.       Roll in crepes, and top with a sprig of dill, for a fancy, quick, and simple breakfast potluck dish.

4.       Serve with cut veggies, my favorite English cuc’s and orange bell peppers, but could use anything you like.

5.       Dip some protein chips or soy crisps in it for a quick snack.

6.       Take Sour Cream and Onion Soy Crisps and place a dollop on each one, top with a flake of salmon and a sprig of dill….easy, easy aappetizers, or hor'derves.

7.       Basically if it sounds good try it on it, it’s so yummy!!

8.       Last but not least…ummm, so bad, lol just lick the bowl clean ;o)

Tomi, Sounds like a great recipe...I think that I will try it this weekend!  I have a similar recipe that uses smoked trout and it is oh so yummy. Thanks for sharing the recipe.
